FYI, my first year of law school, I delivered pizzas on friday nights in edgewater, nj. My friend who owned the pizzeria told me that he would pay cash for a large amount of his mozzeralla cheese and then would skim the money on those pizzas so that the IRS wouldn't tax him on it.
So, you might want to pay someone to sit outside the pizzeria and count how much food goes out to get a feel for what he is skimming.
